 GREEK OLIVE OIL

 

The olive tree is a blessed tree, which flourishes in the stony and arid ground of the Mediterranean. It bears fruit under unfavorable conditions of drought, strong winds and high temperatures, while its longevity and productivity, wrote the story of the Mediterranean people. The olive trees lighted, nourished, cured, crowned, posed up and was identified with high standards, while it inspired the vigorous, for many years, civilizations of the east Mediterranean.
It is a symbol of knowledge, wisdom, abundance, peace, health, power and beauty, which was adored for thousands of years. It comprises a live part of a severe cultural heritage, with legends, traditions and religious solemnities indissolubly combined with fruition, harvest and oil production.
The olive bestowed an extremely sophisticated bequest upon us of merits, welfare and civilization, which we have come in position to evaluate and defend, recently. The cultivated olive tree originates from the eastern Mediterranean basin. It is able to adjust to long period of hot, dry summers while showing special endurance during temperatures bordering on 0° C. Mature olive trees are trees of average size. In some cases, the trees can reach heights of up to 10 meters. In spite of this, dwarf olive trees for decorative purposes can be found.
In the Mediterranean area, olive trees bloom at the end of spring (from April to May) while harvesting begins at the end of November and ends of February in the more southern areas

The Greek olive oil is very healthy oil. A correct and balanced nutrition necessarily contains olive oil on a daily basis. The essence and taste, which gives to all foods, is unique. Just like all oils, olive oil as well, must be used in moderation. The oils contain fatty acids, which can be separated in three kinds: saturated, monounsaturated and polyunsaturated. The animal fats contain mostly saturated fat acids, the seed oils polyunsaturated, while the olive oil contains mostly monounsaturated fat acids up to 83 %. The oleic acid, the main component of olive oil, comprises such a monounsaturated fat acid.

As the main source of monounsaturated fat acids, the olive oil helps:

The lower of "bad" cholesterol (L D L) in blood.
The maintenance in the blood of "good" cholesterol (H D L).
The good function of the intestine.
The prevention of cardiovascular diseases and the protection of the organism from the coronary disease due to the strong antioxidants it contains.
